Yumm Yumm

I made this low-fat turkey chili last night, and I was so proud of myself I couldn't stop eating the delicious chili! Luckily it is low in fat and heart healthy! Here is the recipe and some pictures!

LOW-FAT TURKEY CHILI:

Cook Time: 30 minutes

Ingredients:

1 tbsp olive oil

1 large onion, finely chopped

1 red bell pepper, seeded and chopped

1/2 stick of celery, chopped

2 garlic cloves, minced

3/4 pound 99% fat-free ground turkey

2 tbsp chili powder

2 tsp ground cumin

1/2 tsp oregano

1/2 tsp ground coriander

1 14 1/2-ounce can crushed tomatoes

1 8-ounce can tomato sauce, no salt added

1 15-ounce can black beans, rinsed and drained

4 tbsp fat-free sour cream or yogurt

4 tbsp fresh chopped cilantro (optional)

Preparation:

Heat oil in a large Dutch oven. Add onion, celery, chopped pepper and garlic. Cook for 5 minutes or until onions are translucent. Crumble the turkey into the pan, breaking it apart with a wooden spoon. Cook for about 5 minutes or until no longer pink. Stir in chili powder, cumin, coriander and oregano. Add in tomatoes and tomato sauce, and simmer for 10 minutes, stirring occasionally. Add beans, mix well and cook on low heat for a further 5-10 minutes.

Ladle into bowls. Add a dollop of fat-free sour cream or yogurt on top, plus some fresh chopped cilantro if you have it.
Serves 4.

It's cold outside!

Brrrr! It is so cold in Austin, TX this morning, I will be hitting the treadmill at the gym for my 3.5 mile run today! By the way, I am following Hal Higdon's half-marathon training schedule for Novice, I love this system and think it is going to succeed in helping me finish my first half-marathon!

Yesterday I had a wonderful yoga class at noon, heated at 93 degrees, it was a great Vinyasa flow class in Austin, TX. Yoga Vida 707 hands down is an amazing studio with wonderful instructors, and all of the classes are moderately heated with Vinyasa flow classes.



Ended the day with a 3.5 mile walk through the hill country, out in Lake Travis.


                                    

Enjoyed a long hot bath which really aided my muscles which had been working for me all day long! Wonderful ending to a perfect day!

Eat Run Eat

Today was my 2nd long run of my training for the half marathon! Since I am starting out nice and slow, this Sunday I ran 4.5 miles along the Town Lake trail in Austin, TX with a friend who shops at lululemon and it was so much better running with a partner! I love to talk when I meet new people, I want to know everything about them, and I learned a lot from my running partner today about how often to eat when running several miles 4 to 5 times a week!

She advised me about eating frequently throughout the day, remembering to eat protein as well as carbs. I think my favorite pre-run snack is a big spoonful of Almond Butter by itself, or with an apple or whole wheat toast! After I run, I drink lots of water and then enjoy an egg or oatmeal or both! It is crazy how much nutrition can affect how you perform athletically. I loved getting to hear my running partner's perspective on what she likes to eat or not eat with her running schedule.

It is important to listen to other people and apply what you hear to your own life. I love learning new things about new hobbies, and I have a feeling that running is going to be a hobby of mine for a very long time. Running and Yoga. They are both so great for your body and health. I believe in them and I think that is how I stay motivated everyday to continue living a healthy lifestyle which includes exercisie as much as possible!

Tomorrow= Strength and Stretching. Which means I will be hitting up some hot yoga classes to relax my muscles and release some toxins! :)

New Year = New Goals!

Introducing...  my EAT YOGA blog!

I am very excited about this blog I created this morning! I want to blog about good food & recipes, good work outs & yoga studios, and many other interests in my life! Having a blog is a great way to hold yourself accountable and for those reading it to hold you accountable as well! So, here we go 2010, bring it on!

Yesterday was January 1, 2010 and I enjoyed a long 3 mile walk with my fabulous mom, then ran a few miles at the gym! I had lots of holiday calories I wanted to work off! But, the holidays this year were wonderful, I enjoyed visiting family in East Texas, and relaxing in Austin from Christmas Eve into the New Year! Lots of good food and drink and fun with friends and family!

Today, I am reading "The Paleo Diet" book just as research for myself and because lots of my fellow employees at work live by this book and I am interested to see what all the fuss is about! Thanks to Jen C. for lending it to me! I have a lot of goals which I am hoping to accomplish in 2010 such as:

1) Reading a new book every 30 days by: January 1, 2010 (*Currently reading: Why We Buy & The Paleo Diet)

2) Being promoted to a key leader at lululemon athletica (where I work) by: February 2010

3) Completing my first ever 1/2 marathon at the Rock 'n' Roll Marathon in Dallas, TX by: March 14, 2010

4) Rock Climbing indoors/outdoors once a week by: February 2010

5) Complete a sushi rolling class at Whole Foods by: March 2010

6) Move into an apartment with a roomate in South Austin by: June 2010

7) Educating myself on nutrition through books and workshops by: August 2010

8) Begin training for my yoga teacher certification by: November 2010

I can do all of those things, I just need to keep my eye on the ball and surround myself with relationships which will hold me to my goals and will help lift me up when I need support! I am so excited about accomplishing all of these goals and so what are you waiting for? Go set yours too and get them out there for others to read so that you can achieve them faster! :)
