There are ways to plump up your cereal to make it more nutritious and filling, for instance if you were eating cereal for dinner! Growing up I loved Grape Nuts, but I went to Whole Foods yesterday and couldn't find them, but I did find the Kashi version, so that was exciting to find a new option for the crunchy pebble cereal I love so much.
Asparagus is rich in bone-building vitamin K, immune-boosting vitamin C, and heart-healthy folic acid. Canadian bacon adds big flavor with little damage—an ounce has about one third of the calories of regular bacon and 10 fewer fat grams.

2 9-inch store-bought naan
1 teaspoon extra-virgin olive oil
1/2 cup part-skim ricotta cheese
Salt and ground black pepper to taste
1/4 cup prepared pesto
3 slices Canadian bacon, cut into thin strips
8 asparagus spears (bottom ends snapped off and discarded), cut into 11/2-inch lengths
1/2 cup (or about 2 ounces) grated fontina cheese

Adjust oven rack to lower-middle position and heat oven to 425° F. Place naan on a baking sheet. Mix ricotta and pesto and dollop onto breads.

Toss asparagus with oil and a light sprinkling of salt and pepper. Evenly distribute spears, along with Canadian bacon, over naan.

Bake until breads are warm throughout and asparagus is bright green, about 10 minutes.

Remove from oven; divide the fontina equally and top each naan with a portion of the cheese. Return them to oven and continue to bake until breads are crisp and cheese has melted, about five minutes longer.

Cut each pizza into quarters, serving each person two slices. Serves four.
I love running. I love running.

but...

Sometimes it is painful, shin splints, charlie horses, soreness, that is the not so fun part! I have run a half marathon, a 10K, and a 5K so far this year, and they have all been some of the best experiences I have had in 2010. I love the adrenaline when I get to the starting line, and the burst of endorphins and energy I feel when I know I have one mile to go, it is such a cool feeling! I love the crowds who come to support and cheer on the runners, and the whole energy surrounding racing is just awesome.

Here's just some recent pics of my experiences running...

I really don't know where to start, but lots of opportunities have occurred in my life in the past 30 days. It is crazy how everything happens for a reason and how timing is absolutely right when it needs to be. I was living in Austin, working retail, loving life. I got offered an excellent chance to work at an advertising agency in Dallas in the Broadcast department which sounded like the chance of a lifetime! I accepted, needless to say, and spent 10 days picking up my life in Austin and moving it North I-35 to Dallas.

Reasons I feel this choice made sense:

1) Career job at awesome advertising agency
2) Family surrounding DFW area
3) Lots of my best friends live in DFW area
4) Place to live for a few months until I find apartment
5) Half-marathon on 3/14 is in downtown Dallas
6) Teach me how to be independent and grow up

So, I am so excited for this new journey in my life! It is a blessing to see the ups and downs of life, and to have great friends and family everywhere I go!

I am back to blogging again, work has been crazy busy along with training for my first ever half marathon in March! But, taking this picture of all of my run gear really proves to me that I can officially call myself a runner. I feel amazing, my legs burn everyday BUT I know it will all be worth it when I cross that finish line. I have no high hopes of a goal time, I just want to cross the finish line without stopping for 13.1 miles. I am nervous/excited/tired/sore/proud and I know that I will have all of those same emotions on race day.

This weekend, my employees and I cheered at the Austin Marathon/Half Marathon in Austin, TX. It was so inspiring standing at mile 7 seeing all of the dedicated runners pass by, I was moved and I think I am more motivated on my runs now since seeing that inspiration. Running is truly a blessing, and I feel elite saying that I am running in a half marathon this year. I used to swear that I'd never run farther than three miles, and look at me now. I ran 8 miles this morning. It was tough. But, I did it, and I feel AWESOME!

More blogging to come! Happy Belated Valentine's Day and Happy Presidents Day! :)

2 garlic cloves, minced

3/4 pound 99% fat-free ground turkey

2 tbsp chili powder

2 tsp ground cumin
It is so cold in Austin, TX this morning, I will be hitting the treadmill at the gym for my 3.5 mile run today! By the way, I am following Hal Higdon's half-marathon training schedule for Novice, I love this system and think it is going to succeed in helping me finish my first half-marathon!

Here's the link to the 12-week schedule I am following:
Yesterday I had a wonderful yoga class at noon, heated at 93 degrees, it was a great Vinyasa flow class in Austin, TX. Yoga Vida 707 hands down is an amazing studio with wonderful instructors, and all of the classes are moderately heated with Vinyasa flow classes.
Since I am starting out nice and slow, this Sunday I ran 4.5 miles along the Town Lake trail in Austin, TX with a friend who shops at lululemon and it was so much better running with a partner! I love to talk when I meet new people, I want to know everything about them, and I learned a lot from my running partner today about how often to eat when running several miles 4 to 5 times a week!

She advised me about eating frequently throughout the day, remembering to eat protein as well as carbs. I think my favorite pre-run snack is a big spoonful of Almond Butter by itself, or with an apple or whole wheat toast! After I run, I drink lots of water and then enjoy an egg or oatmeal or both! It is crazy how much nutrition can affect how you perform athletically. I loved getting to hear my running partner's perspective on what she likes to eat or not eat with her running schedule.

It is important to listen to other people and apply what you hear to your own life. I love learning new things about new hobbies, and I have a feeling that running is going to be a hobby of mine for a very long time. Running and Yoga. They are both so great for your body and health. I believe in them and I think that is how I stay motivated everyday to continue living a healthy lifestyle which includes exercisie as much as possible!

Tomorrow= Strength and Stretching. Which means I will be hitting up some hot yoga classes to relax my muscles and release some toxins! :)

I am very excited about this blog I created this morning! I want to blog about good food & recipes, good work outs & yoga studios, and many other interests in my life! Having a blog is a great way to hold yourself accountable and for those reading it to hold you accountable as well! So, here we go 2010, bring it on!

Yesterday was January 1, 2010 and I enjoyed a long 3 mile walk with my fabulous mom, then ran a few miles at the gym! I had lots of holiday calories I wanted to work off! But, the holidays this year were wonderful, I enjoyed visiting family in East Texas, and relaxing in Austin from Christmas Eve into the New Year! Lots of good food and drink and fun with friends and family!

Today, I am reading "The Paleo Diet" book just as research for myself and because lots of my fellow employees at work live by this book and I am interested to see what all the fuss is about! Thanks to Jen C. for lending it to me! I have a lot of goals which I am hoping to accomplish in 2010 such as:

1) Reading a new book every 30 days by: January 1, 2010 (*Currently reading: Why We Buy & The Paleo Diet)

2) Being promoted to a key leader at lululemon athletica (where I work) by: February 2010

3) Completing my first ever 1/2 marathon at the Rock 'n' Roll Marathon in Dallas, TX by: March 14, 2010

4) Rock Climbing indoors/outdoors once a week by: February 2010

5) Complete a sushi rolling class at Whole Foods by: March 2010

6) Move into an apartment with a roomate in South Austin by: June 2010

7) Educating myself on nutrition through books and workshops by: August 2010

8) Begin training for my yoga teacher certification by: November 2010

I can do all of those things, I just need to keep my eye on the ball and surround myself with relationships which will hold me to my goals and will help lift me up when I need support! I am so excited about accomplishing all of these goals and so what are you waiting for? Go set yours too and get them out there for others to read so that you can achieve them faster! :)

Happy New Year and Have a Great Weekend!Laura Sheppardhttp://www.blogger.com/profile/08068588737346240488noreply@blogger.com0
